First fruits are only brought from the seven species for which Israel is renowned (wheat, barley, grapes, figs, pomegranates, olives and dates). They are not brought from dates of the hills, fruits of the valleys or olives that are not choice (i.e., inferior produce). First fruits are not brought before Shavuos. People once brought first fruits from Mount Tz’vo’im before Shavuos and they were not accepted because Exodus 23:16 says, “the harvest festival, the first fruits of your labors….”

Bikkurim 1:4

The following people bring first fruits but do not recite the text: a convert, because he cannot recite the part about “God promised to our fathers” (Deut. 26:3). If one’s mother is Jewish, he brings first fruits and recites the text. When a convert prays in private, he says, “the God of the fathers of Israel.” In shul, he says, “the God of your fathers.” If his mother was Jewish, he says “the God of our fathers.” [Editor’s note: This Mishnah does not reflect our actual practice. Not only do converts recite brachos the same way as everyone else, the Rambam says that they also recited the text when bringing first fruits, in accordance with a braisa recorded in the Talmud Yerushalmi.]
