3,627. Bread of the Five Species of Grain

Hilchos Bikkurim 6:1

One who buys bread from a baker must take challah. One may take challah from bread fresh out of the oven for bread that has cooled or vice versa. This is the case even when there are many trays of bread.

Hilchos Bikkurim 6:2

Challah need only be taken from dough made from the five species of grain: wheat, barley, rye, oats and spelt. This is derived from Numbers 15:19: “When you eat the bread of the land.” “Bread” means only a loaf made from these five species. There is no obligation of challah for bread made from rice, millet, etc.
