A person who cuts the ends of vines or reeds may do so in the normal fashion. One may use an axe, a sickle, a saw or any other tool he desires.

Hilchos Shemittah v’Yoveil 1:21

Regarding a wild fig tree from which wood has never before been cut, one may not chop wood from it the same as one would do in non-shemittah years. This is because pruning a tree is one of the prohibited labors, given that pruning a tree helps it to grow and increase. If one needs wood from such a tree, he must cut it in an unusual way.
