236. Allowing Meat to Drain

Even after the meat has been covered in salt for the requisite period of time, it should not be placed somewhere that the blood cannot drain easily before it is washed off. If one salts meat on a board, it should be inclined so that the blood can drain. There should not be somewhere for the liquid to collect. If one salts poultry or a side of meat that has a cavity, he should place the cavity on the bottom so that the blood can drain easily.

36:11 Meat should remain covered in salt for one hour. Under pressing conditions, twenty-four minutes is sufficient.
